Japan grades wagyu by yield (A to C) and meat quality (1 to 5), so A5 is the top mark. Regional brands are strictly defined: Kobe beef must come from Tajima-strain Japanese Black cattle raised in Hyogo, with a marbling score of BMS 6 or higher. Butchers price beef per 100 grams, and teppanyaki steak is usually served as a set course.
